Kinsale Gin
Located in Kinsale (for which it is named), in Country Cok in Ireland, the history of Kinsale Gin started with Tom O Riordan. It began initially when he bought a small still, and began distilling in his kitchen with the aid of his sister Clodagh (a qualified distiller).
Through a process which involved over 60 different batches, they utilised a series of botanicals. Some of these are traditional, some foraged from the local area and some were exotic. After much sampling by themselves, friends and family they finalised the recipe for what is now Kinsale Gin.
The gin truly captures the 'flavour' of the countryside, due to the hand picked local botanicals used in its creation. The final recipe takes 21 different botanicals of which are included the local botanicals, which are gathered seasonally (and with perfect regard to the environment).
Floral notes of meadowsweet, e;derflower and elderberries join with the exotic aroma of lemon verbena and geranium. These embolden the spicy juniper, balancing the flavours perfectly to ensure a complex, yet easily drunk and exquisite flavour.

Perfect Serve
Delicious in a classic gin & tonic, where we recommend either a neutral tonic such as Three Cents, or for flavours of the sea - try their Aegean Tonic. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of your chosen tonic and stir gently. Garnish with a slice of fresh lemon.
This also works exceptionally well in a Martini. Pour 60ml of the gin into a mixing glass filled with ice (or a cocktail shaker if preferred), and add 10ml of Dry Vermouth (we like Belsazar here). Stir (or shake well) and strain into a Martini glass. Garnish with a slice of lemon or an olive.
