Starward Fortis Whisky
Starward create their Whiskies always thinking about the ethos behind their company. They want to create "Whisky for a curious, food obsessed generation". The distillery is based in Melbourne, which is the 'foodie' capital of Australia. There they believe the focus should be on the flavours, on not the 'airs and graces'.
They use red wine barrels to age their whisky, and all the ingredients are sourced within an hours drive. The wildy varied Melbourne weather also leds a specific character to their whiskies. They even coined a name for this "elemental maturation", and its this they say ensures their whisky is aged in three years - and draws out their signature fruity flavours.
In their Fortis edition, Starward use non-chill filtered single malt - at an intense abv of 50%. It's composed of Australian barley, and craft brewers yeast which lends additional flavour.
It's aged in 100% American Oak barrels which give a sumptuously rich taste and enhances the toasty oak and vanilla characteristics inherent in the whisky. It also boasts juicy red wine characteristics thanks to barrels from mostly Barossa Valley wineries (which help shiraz and cabernet wines). They char a few barrels, to give a depth and intensity - however, most are fresh which gives intense red wine flavours.
As with all Starward whiskies, this has an approachable and velvety smoothness. Initial notes are of Madagascan vanilla and toasted oak. These lead to a palate which is full of cinnamon, quince, chocolate, and Muscadelle raisin, which leads to a baking spice fuelled finish.

Perfect Serve
Spectacular sipped straight, slow and savoured. However it also works well in the mix - try it with vermouth, Campari and orange bitters, or find your own favourite cocktail.
