Bayou XO Mardi Gras Rum
In 2013, in the heart of Sugarcane Country, three childhood friends opened the Bayou® Rum Distillery in Lacassine, Louisiana to once again make America’s original spirit. By harnessing the abundant natural resource of sugarcane, they have created a range of premium, top-notch rums. Each batch is distilled by hand in copper pot stills and aged in 200 litre bourbon and sherry casks. The recipe uses 100% single estate molasses, produced by the oldest family owned and operated sugar mill in the United States.
Bayou® XO Mardi Gras is a treat for any rum lover. It takes up to 6 years to mature this special rum, and like the Bayou® reserve Rum, it is done using the traditional Solera method, achieved by first making a pyramid of barrels. The bottom barrels are tapped, and part of the contents are then bottled. That barrel is then refilled with rum from the barrels above, which in turn are filled from the barrels above that and then new rum is added to fill those at the very top. This method ensures a natural blending process that will deliver a more consistent and delicious taste and quality bottle after bottle. The rum is then rested in sherry barrels for extra flavour.
This rum has a slightly floral aroma with hints of cedar wood, tobacco and dried dark fruits and the taste is complex with multiple layers. There are hints of tobacco, prune and oak and a delicious honey like sweetness. There is a pleasant lingering mouthfeel with honey, a bit of spice from black pepper and then sherry at the finish.
