Four Pillars Olive Leaf Gin
For their first savoury led gin, Four Pillars looked to the Mediterranean and took inspiration from the Olives found there. This was created as a counter to the citrus led gins in the market.
Having visited their great mates at Cobram Estate in Victoria’s Boundary Bend during olive harvest, they realised olive oil makes a perfect ingredient in creating a savoury gin, and even more so when combined with dried olive leaves.
However, it took a full year of experimentation before they found the perfect recipe, one which they were happy to put their name to, with it being released finally in August 2020/
As well as the three different types of cold-pressed oil from olives, and the olive leaf, they use botanicals like rosemary and bay leaf which increase the Mediterranean feeling, while Australian native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.
The result is delicious, savoury and bright. It has a lightly mentholated aroma which leads into savoury notes on the palate of rosemary, green olive, a mild hint of salinity finishing with a rereshing piney juniper finish

Perfect Serve
Delicious when mixed with Fever-Tree Mediterranean Tonic, or in the mix with a Martini.
For a savoury Gin & Tonic take a large glass filled with ice and add 50ml of the gin. Gently add 150ml of your chosen tonic and stir gently. Garnish with a green olive or two.
